Dinner Date Night

A candle-light dinner for yourself, you and your husband, or double it for you and your kids.
This was a hit for our family of 4.

Ingredients20 vanilla wafers (recommended: Nilla Wafers)
2 teaspoons sugar
Pinch salt
3 teaspoons butter, melted
1 banana, peeled and chopped
2 tablespoons brown sugar
2 tablespoons roughly chopped salted peanuts
2 tablespoons mini chocolate chips
2 egg yolks
1/2 cup heavy cream
1/8 teaspoon vanilla extract
1 teaspoon lemon zest
Special equipment: food processor, 2 (6-ounce) heart shaped ramekins

Preheat oven to 350 degrees F.In a food processor pulse vanilla wafers until reduced to crumbs. Continuing to pulse, add 1 teaspoon of the sugar and salt, then slowly drizzle in butter until completely combined. Divide mixture in half and pour into ramekins. Using the bottom of a small glass, press the crumbs into the ramekins to make a crust on the bottom. The crust should be about 1/4-inch thick.

In a medium bowl combine banana, brown sugar, peanuts and chocolate chips. Divide this mixture in half and place in the bottom of each ramekin. In the same bowl, whisk together yolks, heavy cream, vanilla, zest and remaining 1 teaspoon of sugar until sugar is dissolved. Pour evenly into both ramekins and bake for 30 to 35 minutes or until a knife inserted in the center comes out clean.

Parmesan Herbed Orzo (02:46)

Sunny makes a quick meal by boiling up a pot of orzo, or rice-shaped pasta.
Ingredients2 1/2 cups orzo
1 clove garlic, minced
1/4 cup chopped red onion
1/4 cup freshly chopped parsley leaves
1 lemon, zested and juiced
1 tablespoon olive oil
1/4 cup freshly grated Parmesan
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Cook orzo as directed on package.

In a large bowl, toss together orzo with remaining ingredients. Can be served warm or chilled.

1 pound tender cut beef, cut into roughly 2-inch cubes to make 12 pieces
Freshly ground black pepper
1/4 pound prosciutto
1 tablespoon olive oil
1 tablespoon butter
1 small shallot, diced
1/2 cup chicken stock
1 tablespoon coarse-grain mustard
2 tablespoons heavy cream
2 tablespoons freshly chopped parsley leaves

Sprinkle beef on all sides with black pepper. Wrap beef cubes with enough prosciutto to cover entirely. Be sure that prosciutto doesn’t overlap more than once. Place wrapped cubes seam side down on a plate. In a large skillet over medium heat, add oil and butter. When butter has melted add beef cubes, seam-side down to seal, then saute until crisp on all sides, about 8 to 10 minutes for medium rare. Remove beef and let rest 5 minutes before serving. Add shallots to pan and saute 1 minute to soften. Add chicken stock and scrape up brown bits stuck to the bottom of the pan with a wooden spoon. Whisk in mustard and heavy cream and cook 1 minute more to thicken sauce. Remove from heat. Season, to taste, with salt and pepper and garnish with parsley.
